Brew Guide: Pour Over

Pour Over

  1. Measure 22g or of medium-fine ground coffee.
  2. Fold a filter down the scalloped edges. Insert it into the brewer and place it on top of your brew vessel. Pre-rinse the filter with hot water to rinse out the paper flavor and preheat your brewer. Make sure to dump this rinse water before you begin brewing. 
  3. Add the ground coffee to the filter and zero out the scale. (Scale should read 0 with the grounds in the filter, and before adding any water)
  4. Start the timer once you add hot water. Saturate the grounds and let bloom for 30 seconds. (Bloom - let sit undisturbed, you should notice a slight swelling or mound in the grounds)
  5. Pour water in a slow, even spiral, adding water every 10-15 seconds for an even extraction. Pour from the outside to the inside to keep coffee from sticking to the sides of the filter. You should pour until you reach 340g.
  6. Once you hit 2.5 minutes you should have about 8-10 oz of brewed coffee. Remove the brewer and pour the coffee into a warm mug. Enjoy!

Helpful Hints

We recommend pulling the dripper at 2.5 minutes regardless of if all of the water has passed through. This may take some practice to get your timing just right, but we find that a longer brew time can lead to some bitterness in the cup. 

Grind Settings

Since coffee beans off-gas as they age, the correct grind setting for the age of your coffee can play a big role in the taste. Our favorite age to brew coffee is in it's 2nd week post-roast, but here is a general grind setting guide to get the most out of your specialty coffee beans at any age.

Week 1: Fine grind
Week 2: Medium-fine grind
Week 3: Medium-fine grind
Week 4: Medium grind
